Cranberry Muffins for Yule

The magic of cinnamon and tart red berries, for abundance, love, and success!


•1 stick unsalted butter or unsalted vegan butter stick, melted 

•2 eggs, or equivalent flax egg

•3/4 cup to 1 cup sugar (your preference)

•1/2 cup oat milk or almond milk

•1 tablespoon fresh lemon juice or orange juice

•1/4 teaspoon ground coriander seed

•1/2 teaspoon cinnamon

•1 teaspoon orange zest

•1/2 teaspoon salt

•2 teaspoons baking powder

•2 cups all-purpose flour

•1 ½  cups fresh cranberries 


Preheat the oven to 350°, and line a muffin tin with paper liners. Whisk together all ingredients up to the flour until well blended. Gently stir in flour, being careful not to overmix, and fold in cranberries. Divide batter evenly between 12 muffin cups. Bake for about 25 minutes or until golden and firm on top.
